ERNESTOuchimuraThis week’s Hollywood Bowl calendar concludes with Reggae Night XIII, and like reggae itself, featured chef Ernesto Uchimura is the product of diverse cultural influences. As a kid, both Argentine and Japanese cuisines were served in his home, but Uchimura was always fascinated by iconic American comfort foods like fried chicken and burgers, both of which he has nearly perfected at Plan Check Kitchen + Bar. Here he introduces some quick-and-simple recipes ideal for enjoying with music under the stars.

“Music inspires me to use ingredients, as a musician would use musical notes. A musician has a few notes they can use to create complex beautiful music and as a chef, I’m inspired to take a similar approach when creating new dishes”

—Ernesto Uchimura
