This week’s Hollywood Bowl calendar features a night reserved for Russian masters
Prokofiev and Shostakovich. The obvious chef for creating a menu worthy of this event is
young Giselle Wellman. As the talented toque at legendary caviar purveyor Petrossian in
West Hollywood, her cooking appeals to tsars and stars alike. Bring along a little caviar

WHITE FISH SALAD

Serves 3-4

INGREDIENTS

  • 1 cup whitefish salad, preferably Petrossian
  • 1 Serrano chile, chopped (depending on how spicy you want it)
  • 1 tablespoon chopped fresh cilantro
  • 1 pear, diced
  • 1/4 cup Champagne vinegar
  • 1/4 cup granulated sugar
  • 1/4 water
  • bagel chips

PROCEDURE

  1. In a small pot combine the Champagne vinegar, granulated sugar and water. Bring to a
    boil. Once it boils, pour over the pears. Place in the refrigerator to cool.
  2. Take the pears out of the pickling liquid and combine all the ingredients without the
    pickling liquid. Store the salad in the refrigerator.
  3. Serve with the bagel chips.

 


MEDITERRANEAN SMOKED SALMON SANDWICH

Serves 3-4

INGREDIENTS

  • 7 ounces smoked salmon, preferably Petrossian hand-sliced smoked salmon
  • 1 baguette
  • 1/4 cup baba ghanoush
  • 1 small English cucumber
  • 2 tablespoons feta cheese
  • 1 tablespoon lemon
  • 1-1/2 cup arugula
  • 1/2 roasted tomatoes
  • 1 tablespoon tzatziki

PROCEDURE

  1. Cut the baguette into individual portions. Slice down the middle, leaving one side
    still attached, making a pocket.
  2. Scoop out the crumb and toast lightly.
  3. Stuff the sandwich with all the ingredients.
 

CHEF’S NOTE:

  • Baba ghanoush can be store-bought or made at home. If you decide to make
    it at home, roast eggplant with salt, pepper, olive oil, and garlic.
    Once the eggplant is cooked all the way through, mix in a food processor
    with sesame paste and a little bit of lemon.
  • Tzatizi, a yogurt-cucumber sauce, can also be store-bought or made from
    scratch. If you decide to make it at home, simply combine yogurt, lemon,
    dill, and shredded cucumber to taste.

 

 


 


ALMOND COOKIES

Makes 16 cookies

INGREDIENTS

  • 1 cup unsalted butter
  • 1/2 cup confectioners’ sugar, plus more for coating baked cookies
  • 1 teaspoon of vanilla extract
  • 3/4 cups almond meal
  • 1 cup all purpose flour
  • 1 cup chopped almonds

PROCEDURE

  1. Preheat oven to 350°F.
  2. Mix butter and sugar until smooth in electric mixer.
  3. Add the vanilla.
  4. On low speed, add the flours.
  5. Mix in the chopped almonds.
  6. Form cookies and place on cookie sheet.
  7. Bake for around 20 minutes or until they have a little bit of color.
  8. Let them cool, then coat them in powdered sugar.
